Equipment Required

  • canning jar


· 1 cup water

· 1⁄2 cup + 2 tablespoons white vinegar

· 2 tablespoons rice wine vinegar

· 2 tablespoons light basalmic vinegar

· 4 tablespoons baker’s Stevia (measures like sugar)

· vegetables

· 1⁄2 teaspoon dill, dry

· 1⁄2 teaspoon garlic, dry, small pieces (You can use 2 cloves of chopped fresh garlic instead)

· 1⁄2 teaspoon celery seeds

· 1⁄8 teaspoon black pepper corns

· 1⁄4 teaspoon mustard seed


Mix together the first 5 ingredients, through Stevia.

Cut up the vegetables in small pieces, and place into canning jar.

Add spices (dill through mustard seed).

Add liquid to completely cover vegetables. Cap tightly and place in refrigerator for at least 2 hours.


Various vegetable combinations can be used. For example, Cauliflower, sweet onion and 1/4 fresh jalapeno, or Cucumber, red onion, and a few slices of carrot, or Carrots and sweet onion.
