Potato Leek Chowder Yield 15 cups Equipment Required large stock pot large vegetable steamer Ingredients · 10 potatoes, medium · 1 onion, medium · 4 leeks · 4 carrots · 4 stalks celery, including inner leaves · 1 red bell pepper · 1⁄2 pound baby bella mushrooms · 1-3 cloves garlic (depending on taste) · 2 cups roasted corn · 1 quart rice milk · 3-4 tablespoons olive oil · Seasonings · 1 teaspoon sea salt · 1-1⁄2 teaspoons black pepper ground · 1 teaspoon Mrs Dash Table Blend · 1⁄2 teaspoon rosemary, ground · 2 tablespoons thyme, dried · 2 tablespoons parsley, dried · 1⁄2 teaspoon marjoram, dried · 1⁄2 teaspoon smoked paprika · water Directions Cut the leeks in half lengthwise.
Rice Milk Equipment Required blender Ingredients · 1 cup brown rice, cooked, organic · 4 cups water Directions Put all of the rice and about half the water in the blender. Blend until smooth and creamy. Add the rest of the water and continue blending until mixed. Store in a glass container in the refrigerator. Shake well before using.
Banana Pear Smoothie Servings 2 Equipment Required Vitamix Ingredients · 2 bananas, frozen · 1 Asian pear, cut in quarters, stem and seeds removed · ice · water · Ocean Spray 100% Juice Cranberry Raspberry · 1 handful blueberries, frozen · 1 tablespoon lemon juice · 1 teaspoon fresh lemon zest · 1 handful champagne grapes Directions Add all ingredients to the Vitamix and put on the lid.
Carrot Cake Frosting Ingredients · 1-1⁄2 c cashews, raw · 1⁄2 c water, as needed · 1 teaspoon baker’s stevia (measures like sugar) · 2 tablespoons lemon juice (about how much you should get out of one lemon) · 1 tablespoon coconut nectar (or agave syrup) · 1⁄4 teaspoon vanilla Directions Blend cashews and water together in blender until very smooth. Add more water if needed to create a smooth paste.
